Alum is used to maintain crispness in pickling recipes. Alum is made from vegetables and watermelon rind.
Dissolve alum in water using amounts specified in your recipe. Use no more than 1/4 tsp (1 mL) per 1 qt (1 L) water. Rinse vegetables thoroughly. Do not add alum directly to the final pickling brine.
