3-Cheese Chicken & Broccoli Bake

|1 tbsp||Canola Oil|
|3 sml||Chicken breasts, skinless, boneless cut into bite sized pieces (roughly 550g)|
|1 bunch||Broccoli stems removed, crowns cut into florets (roughly 2 cups)|
|1 can||Great Value Cream of Chicken Condensed Soup (284ml)|
|1.5 cups||2% Milk|
|4||Green Onions thinly sliced|
|1 cup||Great Value Parboiled Brown Rice|
|1 cup||Great Value Light 3 Cheese Blend|
- Preheat oven to 400F (200C). Spray 11x7-inch (2L) glass baking dish with canola oil cooking spray. Line a rimmed baking sheet with foil, set aside.
- In a large 12” (30cm) nonstick frying pan, heat oil over medium-high. Add chicken; cook 3-5 minutes, stirring often, until no pink remains. Add broccoli. Cook 2-3 minutes longer or until broccoli begins to soften. Remove pan from heat. Add soup, milk, green onions, rice and ¼ cup shredded cheese; stir to combine.
- Transfer mixture to prepared baking dish making sure rice is submerged. Top with remaining cheese. Bake in center of oven for 35-45 minutes or until bubbling and starting to brown. Let rest 5 minutes before serving.
