2 tbsp Lime Juice
2 tbsp Canola Oil
1 sml Jalapeno Pepper finely chopped
2 tsp Honey
1 can Black bean, drained and rinsed 540 ml
142 g Baby Spinach leaves
1 cup Cherry Tomatoes halved
28 g Corn kernels
1 sml Avocado cubed
0.5 sml Red Onion thinly sliced
2 cups Corn tortillas chips, coarsely crushed


1) Whisk lime juice with oil, jalapeño and honey in a large bowl.
2) Add beans, spinach, tomatoes, corn, avocado and onion. Toss until well coated. Divide among 4 plates and sprinkle with tortilla chips.
