Chicken Roasted with Artichokes, Tomatoes and Capers

|2 cups||Cherry Tomatoes or grape tomatoes|
|1 can||Artichoke hearts quarters, drained|
|4||Clove Garlic finely chopped|
|1 tbsp||Capers jarred, drained|
|4||Boneless skinless chicken breasts|
|2 tbsp||Becel® with Bertolli® Olive Oil margarine|
|1.5 tbsp||Balsamic vinegar|
|2 tbsp||Fresh oregano chopped|
|0.25 tsp||Ground Black Pepper coarse|
- Preheat oven to 425° F (220° C). Spread tomatoes, artichokes, garlic and capers in single layer on large rimmed baking sheet. Top with chicken. Dot chicken and vegetables with Becel® with Bertolli® Olive Oil margarine. Drizzle with balsamic vinegar, then sprinkle with oregano, salt and pepper.
- Roast 25 minutes or until chicken is thoroughly cooked.
- Serve, if desired, with hot cooked couscous or rice.
