|1 can||Chick Peas (540 ml)|
|1 cup||Frozen Peaches and Cream Corn Kernels|
|0.25 cup||Fresh Parsley chopped|
|0.25 cup||Fresh Coriander|
|0.25 cup||Fresh Basil|
|3 cups||Salad greens (of your choice)|
|0.25 cup||Great Value Extra Virgin Olive Oil|
|3 tsp||Fresh Lemon Juice|
|0.25 tsp||Table Salt|
|0.50 tsp||Ground Pepper|
- Prepare salad dressing ahead of time: In a small bowl, whisk together the oil, lemon juice, garlic, salt and pepper. Cover and refrigerate for 4 hours or more.
- Place cucumber, red pepper, chickpeas, corn, parsley, coriander, basil and salad greens in a large bowl and toss.
- Pour dressing over salad and toss to combine.
