Guac & Corn Salad

|1 can||Great Value Whole Kernel Peaches & Cream Corn|
|1 cup||Grape Tomatoes quartered|
|1||Sweet red pepper seeded & diced|
|4||Green Onions thinly sliced|
|0.5||Jalapeno Pepper seeded & finely chopped (optional)|
|Coriander chopped, to taste (optional)|
|2 tbsp||Great Value Extra Virgin Olive Oil|
|2 tbsp||Lime Juice|
|0.5 tsp||Great Value Garlic Salt|
- Transfer ¼ cup (60 mL) diced avocado to a small bowl, set aside. In a serving bowl, toss together remaining avocado, corn, tomatoes, red pepper, green onions, jalapeno, and coriander.
- Using a fork, mash the reserved avocado until smooth. Stir through lime juice, olive oil, and garlic salt until combined. Pour avocado dressing over other ingredients and mix well to coat. Serve immediately or store in the fridge. Best is served within 24 hours of preparing.
- Yields 4 servings
- To kick up the heat, add more jalapenos or leave in the seeds for a really fiery hit!
