1 can Coconut milk 400 ml
0.5 cup Chicken Broth or vegetable broth
3 cloves Garlic smashed
0.5 tsp Table Salt
0.5 tsp Allspice
1 cup Long grain rice
1 can Red kidney beans, drained and rinsed 540 ml


  1. Combine coconut milk, broth, garlic, salt and allspice in a medium pot. Bring to a boil. Add rice and stir. Reduce heat and simmer, covered, 20 minutes or until rice is tender and liquid is absorbed. Stir in beans and cook another 2 to 4 minutes. Remove from heat and let stand, covered, 5 minutes.
