1 tbsp Extra virgin olive oil
1 Onion finely chopped
1 Celery stalk, chopped
0.5 Pepper sweet, red, finely chopped
2 cloves Garlic minced
Fresh thyme
0.5 tsp Salt & Pepper each
0.5 lb Ground turkey lean
1 Fresh zucchini chopped
1 can No salt added white beans drained and rinsed
2 cups No-sodium chicken broth
0.5 cup Corn fresh or frozen kernels
3 cups Fresh Swiss chard chopped
1 cup 1% milk


1. In a large Dutch oven or saucepan, heat oil over medium heat. Add onion and celery; cook, stirring until softened, about 5 minutes. Add red pepper, jalapeno if using, garlic, thyme, pepper and salt; cook for 1 minute.
2. Increase heat to medium-high; crumble in turkey, stirring and breaking up with wooden spoon until browned.
3. Add zucchini, beans, chicken broth and corn; bring to boil. Reduce heat; cover and cook for 10 minutes. Stir in Swiss chard and milk; simmer, uncovered for 5 minute.
