Ingredients+

1 cup Low-fat plain yogurt
0.5 cup Brown Sugar
0.5 cup Vegetable Oil
2 Egg
1 tsp Vanilla Extract
1 cup All Purpose Flour
1 cup Whole wheat flour
2 tsp Baking Powder
0.5 tsp Baking Soda

Directions

  1. Preheat oven to 375F. Grease a 12-cup muffin pan or line with paper liners. In large bowl, whisk together the yogurt, brown sugar, oil, eggs and vanilla until blended. In another bowl, mix together the all-purpose flour, whole-wheat flour, baking powder and baking soda.
  2. Add flour mixture to egg mixture and stir just until evenly blended. Spoon batter into prepared muffin pan, filling each cup nearly to the top. Place in oven and bake for 20 to 25 minutes, until lightly browned and a toothpick poked into the middle of a muffin comes out clean.

Recipe notes

TIP: For a sweeter muffin, increase the brown sugar to 3/4 cup.
 
Oatmeal Blueberry Muffins
1. Reduce the amount of whole wheat flour to 1/2 cup.
2. Add 1 cup quick-cooking rolled oats to the dry ingredient mixture.
3. Stir 1 cup fresh or frozen blueberries into the prepared batter just before spooning into the muffin pan.
4. Bake as above.
 
Peanut Butter Chocolate Chip Muffins
1. Reduce the amount of oil to 1/4 cup.
2. Add 1/2 cup creamy or chunky peanut butter to the yogurt mixture, stirring until well blended.
3. Add 1/2 cup semisweet chocolate chips to the prepared batter just before spooning into the muffin pan.
4. Bake as above.
 
Apple and Granola Muffins
1. Reduce the amount of whole-wheat flour to 1/2 cup.
2. Add 1 cup granola cereal to the dry ingredient mixture.
3. Stir in 1 cup chopped fresh apple to the prepared batter just before spooning into the muffin pan. For a crumble-like topping, sprinkle tops of muffins with additional granola before baking.
4. Bake as above.
