I tried this yesterday for my husband's 82nd birthday party. It was delicious! I added a half teaspoon of real vanilla and made a cream cheese frosting.. we had guests and they all commented about how good it was. Cake is for special occasions and this cake is definitely special.

Fantastic cake

Bob's Red Mill

Best Gluten Free cake mix, flour mix I've ever used! Best used with denser cake recipes, very versatile. I use it with recipes calling for packaged cake mix, and for those that don't, modifying the portions in so doing.
My family is not gluten free like I am, and they can't tell the difference most of the time.

Best cake mix - gluten free or not!

I use this cake mix to make many different cakes and they have all turned out great. You'd never guess they are gluten free. My latest was a cinnamon Bundt cake. Instead of using 1/2 cup of water as directed, I used 3/4 cup of sour cream. I poured a third of the batter in a Bundt pan and then sprinkled with cinnamon and brown sugar and repeated layers until done and did a little swirl with a knife. It baked at 350 for about an hour or until the tester comes out clean. .

Many uses

Bob's gluten free Vanilla cake mix is one of our family favorites. We just recently made the vanilla cake but added a can of pumpkin for a super moist fall coffee cake complete with streusel topping. Several members of our family have Celiac so gluten free mixes are an essential part of our diet and each weekend we make a delicious treat using Bob's mixes. Vanilla and chocolate are our favorites since they are so versatile and easy to make. We will continue to purchase Bob's Red Mill gluten free mixes for life.

One of our family favorites

Really moist, just the right amount of sweet, light, decadently delicious gluten free cake. I swear you cannot tell its gluten-free, or that it only took 4 minutes to make. I am lucky enough to live within driving distance of Bob's Red Mill and it's always such a treat to visit. I LOVE BOB'S!

This stuff is so good

I am an avid baker and am very particular about the taste and texture of my gluten-free baked goods. Many times, my major complaint about GF baked goods is they are dry and the texture is gritty. I used this cake mix for dessert for a friend who has Celiac (I have Celiac also) and it was delicious. The cake as-is, is a tiny bit dry but it's actually not bad.
The second time I made this cake, I added 1/2 cup of sour cream (mayonnaise would work also). Once mixed, I also let the cake sit for 30 minutes, to allow the dry ingredients to absorb the liquid. Doing these two things greatly improved the moisture and texture of the cake. It won't rise as a cake made with traditional flour will, but it's excellent nonetheless. I served this with a mascarpone frosting, decorated with berries. It was a hit!

Good cake for celiac patients

Of course anything gluten free from Bob's Red Mill is great. That said, I thought the consistency of the batter was thicker that I usually expect. That was probably the addition of binder, which ensures the cake will hold together. I had some trouble deciding how much batter to split between pans since the batter was so thick. However, the result of the made cake was superb and tasty. I used vanilla pudding between layers and Chocolate sauce drizzled on top to make a mock Boston cream pie. Thanks for your support of people who need gluten free everything.

Cake that does not fall apart

I read the reviews and had high expectations.... I don't know what went wrong. The toothpick came out clean and it was 35 minutes, I let it cool as instructed and then cut some pieces to freeze. It was a crumbly sticky mess, couldn't make a nice clean cut. I don't think it was underbaked the taste is so so, I think I prefer the rice flour texture and flavor. I don't think I will buy again.

Prefer rice flour

This is the most revolting cake I've ever made in my life. It baked well and looked great, but smelled like play-doh and tasted like it too. If you're looking for a GF cake, do not reach for this mix.

10/10 would NOT recommend.
