Best think about these knives is the blade shape. A straight cutting edge is far easier to sharpen than a curved one. The steel is medium hardness, so it takes an edge quite easily which is perfect for keeping them sharp. You'll appreciate this because an easy to sharpen knife will not hold an edge as long. You have to keep it sharp, never let it get dull...too hard to bring it back.

The reason I took off a star is because they did not arrive as sharp as they should be. The factory hollow ground edge was too shallow and had to be sharpened before use. This is the 2nd time I've bought this same set of knives. The first set lasted about 13 or 14 years.
