Extremely sharp and very fast. We love that we can adjust the thickness of cuts quickly and easily. The weight and stability of the mandoline provides a solid platform for slicing through all manner of vegetables.

Great Kitchen Helper

First the positive. The mandoline is sturdy and has a nice stable base.  It is easy to clean, and I feel it is one of the safer designs when it comes to inserting and removing blades.

I have severe arthritis in both of my hands and wrists, so the rest of this review is based on my experience in light of this. Slicing tomatoes, potatoes, zucchini and onion is a snap. There is a learning curve when using the dicing functions. My zucchini did not slice all the way through. I also had a difficult time getting a good dice on a block of cheddar cheese. This could be a result of my lack of hand strength, or lack of experience. I found that adjusting the dial for slice thickness was a little difficult for me.

Getting used to the dicing methods, but have had great results with dicing. The diamond takes some practice to get it right.

Making a "brunoise" of onion is a breeze with the fine julienne attachment. One could easily go through five onions without a sweat. The two included blades appear to be 10mm (3/8in) and 4mm (1/8). It would be nice to have a 2mm for garlic. 

Potatoes are much easier than using my trusty old Matfer 44595, and less hazardous. Inserting the Matfer julienne blades can be intimidating for the unskilled but the Viper insets are very safe to use and clean, they take about a third of the time. The benefit of the old style mandoline is that the straight blade is able to be sharpened regularly and it's rotated for a waffle cut.

The Viper v-slant slices with about half of the effort. This makes producing sweet potato fries practical, which is too hazardous with the straight style.

The whole kit with the three-attachment holder hangs conveniently on the wall. The Ergonomic Pusher is best stored off of a hanging mandoline so it won't fall off. When slicing, it's easy to place the Viper over a bowl to save time.
