It is made for use on gas or electric burners and the pan's heavy weight carbon steel body is designed for rapid, even heating and cooling ?? a must for any stir-fry. Its generous size will enable you to make delicious Asian meals for your entire family. Once seasoned, these heavy weight carbon steel pans will render superior cooking performance for life. This pan is perfect for creating such authentic Asian-style recipes as curried shrimp with lemon rice and Szechwan beef stir-fry. This pan features Blonde wood grip and helper handles. These wood handles are designed to stay cool on the stovetop, so you can easily remove the pan from the burner without using potholders. Joyce Chen's slogan "Eastern Cookware for the Western Kitchen," reflects her focus on providing high-quality, versatile tools and products that have Asian flair, but can be used in a western kitchen. Today, Joyce Chen Products come from all over the Pacific Rim to bring the best of Asia to you. Joyce Chen opened her first restaurant in Cambridge, Massachusetts in 1958. The restaurant flourished, and in 1973 a larger Cambridge restaurant was opened. Chen also began writing Chinese cookbooks and in the 1970s began hosting a cooking show on public television. She found that the selection and quality of Chinese cookware in America didn't live up to her high standards?? so she developed her own.

[This review was collected as part of a promotion.] This carbon steel wok met all my expectations. It does take a bit of elbow grease to prep %26 season the pan for using. There are lots of YouTube videos showing how to season and wash a wok, and basic instructions that came with the wok. Very similar to cast iron. Basically - the very first time you wash it, scrub the surface of the wok with the green back of a sponge or steel wool, and dry the wok. Then heat the wok on high heat until it starts to darken in color or 'blue'. Next add a very small amount oil, carefully wipe a thin layer around the wok, and let it cool down. I heated, added oil, and cooled the wok 2 times to build a seasoning layer. In total a fair amount of work to put into a pan, but about the same as maintaining a cast iron skillet. It balances on our stovetop no problem and cooks great. Stir-fry, beef and broccoli, you name it. And for some recipe ideas/wok tips, look for 'Made with Lau' and 'The Woks of Life' on YouTube.

Not Your Ordinary Wok

Hands-down one of the best woks you can own. Don't be fooled into spending a ton of money on a wok when this is the “gold-star”standard of kitchen woks.

Cast iron like seasoning required

[This review was collected as part of a promotion.] overall the quality is nice. The material is good, the design is fine. I'm giving this three stars because if you don't have actual wok burners this thing is a pain to season properly I have a fairly powerful regular gas stove and got most of the job done but I had to use a torch on the underside near the edges to fully season this wok.

food cooked in it tastes great. 

again, if you don't have a stove made for use with a wok you may want to avoid this purchase. 

other than that, nice quality wok.
