I was very surprised by this dish! Barley can usually take a long time to cook, but this version of Knorr Lemon Chicken makes everything very fast and without dirtying more than a pan

Delicious

[This review was collected as part of a promotion.] I wasn't too excited at first because i'd never had barley before. Having a two year old menu options are limited for the parents. BUT suprisingly, she loved it! Even ate the spinach! I added a little more carrots and spinach than was recommended and we couldn't be happier. It's on the list to buy next time we go on our big grocery shop. We paired it with some squash and zucchini and the one pack was plenty for 2 adults a teenager (adult size appetite) and a 2 year old! This was a good experience for us all. I recommend everyone try it. I don't believe you'll be disappointed.

AMAZING and EASY

The Knorr One Skillet Meals caught my attention right away, I like meal kits and simplicity when I cook most of the time, and with a kit like this where all you need to really add are the vegetables and protein there also seems to be room for customization as well.
I bought several varieties of the Knorr meals at the store and chose the Lemon Chicken With Barley Starter for my initial attempt. I wanted to really highlight the combination of lemon, chicken and vegetables and decided to add some stir-ins with a Mediterranean feel.

Truly, I used the meal kit as a starting point for a food adventure! Opting for 5 bone-in chicken thighs, and went wild on the fresh vegetables, using three small yellow summer squash, a red and a yellow bell pepper, an onion, a bunch of asparagus spears, and about 2 tablespoons each of fresh thyme and oregano. 

Rustic seemed fitting for the dish so I chopped the vegetables into fork-ready size chunks, and placed them in my largest non-stick skillet, added the fresh herbs and the zest from an entire lemon, four cloves of minced garlic, about 2 tablespoons capers, a half cup kalamata olives, between a half and a 2/3 cup of crumbled feta cheese, and fresh ground black pepper to taste.

This is not in the directions at all, but I drizzled about 3 tablespoons of extra virgin olive oil over everything and used my hands to gently mix everything up right in the skillet. Then I opened the package of barley and spices and scattered it over the top of the vegetables and herbs and mixed it through thoroughly. I used between 1.5 and 2 cups of chicken stock and poured that over it all and I used a spoon to stir gently, distributing the barley through the vegetable mix.

Then I placed the chicken thighs on top and slid it uncovered into a 325 degree oven for an hour. After the hour was up I used a spoon and stirred gently between the pieces of chicken and pushed the barley into the broth. The food is slightly liquid at that point but I found that the barley absorbs it. 

I upped the oven temp to 345 and cooked another hour. At that time the chicken was beautifully browned and crisp skinned because it was sitting on top of the vegetables and barley and not in it. The meat was wonderfully moist and tender with a lot of flavor. and the barley was cooked through, and the vegetables soft, but still had texture.
The rich  saltiness of the feta cheese, capers and kalamata olives accented the lemon flavoring and the vegetables.

Honestly, I planned on setting the thighs on a plate and stirring in baby spinach by the handful at the end, before returning the meat to the top of the dish, but I forgot and took the photographs first. There is a bit of wonderful broth with this  and then as the food sat it did absorb almost all of it.

So pleased with the Knorr skillet meal and the quality of the barley and seasonings. The way I did it was fast and easy, and the food was homey, comforting and with all of the vegetables and grain I felt good about what I was eating. 

I will make this again, and am looking forward to trying the other Knorr One Skillet Meals!

Easy Comfort Food You Can Feel Good About!

[This review was collected as part of a promotion.] Knorr one skillet meal ! Let me tell you ! I was actually shocked on how good it was. We got the lemon chicken with barely pack and I was nervous to center my meal around barely. I tend to stick to rice but the simplicity of this package enticed me. Basically all you have to do it add the chicken and the vegetables you desire ! I followed the recipe on the back for this one and did spinach and carrots ! Everything turned out perfect and my fear of barely is gone! Next time I would add come peas to the mix and it will only get better ! Knorr one skillet meal was simple as ever and I'm hooked !

Barley for the win!

[This review was collected as part of a promotion.] I wasn't sure about the barley in this meal started I have never really been a fan but I figured why not give it a try. This meal was delicious! MY family enjoyed it even the kids. It tasted like brown rice to me, the veggies, and chicken made it a delicious well rounded meal. I would definitely recommend this to anyone. It was also super EASY to make which is a plus for a working mom like myself!
I did season my chicken as if I was cooking it as just a meat before hand so it added to the flavors that were already in there. Knorr did not upset with this one!

Wasn't sure about the "barley"

[This review was collected as part of a promotion.] The meal was very easy and quick to make. The instructions were easy to follow as well. I appreciated that the recipe was only a couple of steps. Being a mom of small children, I value quick and healthy recipes. My only critique would be the flavor. It's not bad, but it was not something I was particularly impressed with and would want to make again for my family. My children didn't care for the flavor or the barley consistency. Being in the season of life I am in now with small children, crowd pleaser meals are a must. I may not buy this flavor again, but I would be interested in trying the other flavor varieties.

Quick and easy but flavor was lacking

[This review was collected as part of a promotion.] Yikes, I can still taste that flavor just writing this review.  I made the one skillet meal last week and it was just too much.  It tasted artificial, I think it would have been much more enjoyable if it had less flavoring.  I felt like I was making a sour face and closing my eyes when I took a bite.  I had my sister and fiancee try it without telling them my thoughts and they both said the same things; it taste artificial and it was a little too much.   I think that the portion size was great and it was super easy and quick to prepare which was great and why I am giving it two stars.  If I liked the flavor I would purchase this for sure just for the fact that I could throw it on the stove with some spinach and carrots and have a nice, warm, hearty meal ready in 25 minutes.

One meal with too much flavor

[This review was collected as part of a promotion.] Tried Knorr Lemon Chicken with Barley Meal Starter. The directions are easy to follow and required simple and inexpensive ingredients that are easy to find. Directions for cooking chicken are shorter than what chicken requires to get it looking like the suggested serving picture.  Knorr One Skillet Meals fell short in flavor and appearance that I just couldn't bring myself to take a picture of a colorless and unappealing meal.
