They are as expected.  You must presoak in baking soda and lemon juice to soften them up.  Rinse them off and then they become perfect low carb / low calorie noodle option for salads and Asian dishes.

[This review was collected as part of a promotion.] Some people can't figure out how to use these. I like chopping it up and adding it to cooked vegetables or putting chicken or other meat to stew in water on stove add veg and seasoning then add the noodles. The noodles definitely have aseaweed flavor and are more viscous that regular noodles so don't expect regular type noodles. I do like them though as a way to get my seaweed and a treat as I don't eat grains at all.

I eat low carb to control blood sugar and low sodium to control hypertension. Kelp noodles are fantastic, and this brand is a winner! Almost flavorless with a good mouth-feel, these take on flavors beautifully. I like adding them to servings of soup or tossing with stir fry, sesame oil and Bragg's Aminos (low sodium soy sauce substitute).
LEARN TO PREPARE THESE for the best texture.
Soak in BAKING SODA (not Baking "Powder"). Hot water (not boiling), 2 teaspoons baking soda, soak for 10 minutes.

Good noodles

I've only cooked these once so far.  I boiled the kelp noodles for 45 minutes and they were still crunchy.  But when I added them to alfredo sauce, they became soft--the consistency that I wanted them to be.  I need to try other recipes with them.  They should be a staple sold at local Wal-marts.
