Shun Cutlery

It's very light and works very well with the Shun knives.

Very beautiful, very soft wood. The one I purchased (on-line) came with a small flaw on the back side (opposite side from logo), a tiny notch of wood missing along the seam of one of the joints. This would not affect the performance of the board so I did not send it back. It was a unfortunate because the wood is so handsome that any flaw is disappointing. I finnish sanded mine on both sides with progressively finer grit until the smoothness made it shine (3M 2500 grit Imperial Wetordry and finest steel wool). Then I treated both sides with cutting board oil allowing each application to soak in. I applied 3 or 4 coats. The first use left cut marks and stains that are not going away. This board is very very soft. This is good for your knives. You cannot hurt or dull you knives on the Hinoki wood but this board will not last long with regular use. I am hesitant to cut raw meat on this board due to all the cut marks and how porous it is. The ability to clean and disinfect the surface is limited due to such marring and porosity. Still, I like this wood. It is kind to my expensive knives. I use my board mostly for raw vegetables. Don't bother with any size less than the large. Anything smaller seems impractical unless you want to butterfly a single shrimp. I wish they could make one larger, say 21 in. by 15 in. (53 cm by 38 cm). That would be sufficient space for most general cutting and chopping.

Strong but not heavy, beautifully scented hinoki wood. I understand why this is sometimes found in perfumes.

Great cutting board

A beautiful board. Thin, light and great size. However it losses a star because of its build quality. The corners had not been sanded down, and it had an extra notch of wood protruding. These may be tiny details and would not affect the functionality, but it is disappointing despite the price and quality I was expecting.

Good Chopping Board

This smells nice, but warps like crazy, stains easily, and allows deep knife marks to show from routine use. After daily wet and dry cycles mine began to crack pretty severely from the short edge to the center. Not a durable product
