Roasted Eggplant

I wish it had a bit of smokiness.
Sauté diced fresh tomatoes (2 large or 3 medium) with garlic for about 20 min, you can also add grilled green pepper for extra flavor.
Then, add the eggplant and cook everything together for 5 minutes.
It's best if left to rest overnight, the flavors deepen beautifully.

The best

I was really looking forward to trying Suntat Roasted Eggplant, but unfortunately, the product was spoiled when I opened the jar. The smell and texture clearly indicated it had gone bad, which was a big letdown.

I've since learned that it's recommended to pour or cover the product with oil to preserve it after opening. However, there was no clear instruction on the jar about this, and since it was unopened and within its expiry date, I expected it to be in good condition.

It's a great idea for a product, but the quality control and labeling need improvement. Sadly, I couldn't use it and had to throw it out.

Please bring back sana brand ! 
I am really sad that the sana product is no longer carried ! It was of much greater quality ! This is chunky and full of water and almost tasteless ! Sana was a much superior product !
