Rated 1 out of 5 by from I can't find what I'm looking for Another imitation traditional balsamic vinegar that isn't good enough to be mistaken for a real thing like a good imitation would be. The problem is not expensive to fix. It's just that the fruit sugar content (from concentrated juice / must) is too low. Fruit sugar content should be about 10x acetic acid content. You could do that yourself with a concentrated juice that you boil or microwave to reach desired sugar content and a strong enough (18% to 20% acetic acid) wine vinegar. Maybe I should cause apparently I can't find it done right in a bottle in store.
