This all natural skillet is constructed of 99% pure iron and a beeswax-based protective finish to fight against oxidation while helping season the skillet. This pan is awesome. Even though it's too early (bought these last month) to review it, I'm going to go ahead. Once you season it, the pan is essentially non stick. I can't believe it took me 20+ year to discover best non stick alternative. Now I can't shut up about it. I'm recommending these to anyone who'd listen. To be honest both Matfer and De Buyer are neck and neck, but these two are the best carbon steel available according to multiple online reviews. Stop wasting money on non stick every couple of years. I've bought some of the most expensive pans only to find the coating stripping away within few months. Never again. 
De buyer pans are great! I've cooked eggs multiple times without issues. Haven't had much luck with South Indian crepe (dosa) though but hoping it'll get better with time.

I got a little overzealous in the first season and thought I'd make a ton of work for myself, but thankfully some barkeepers friend and warm water got my mistakes off relatively easily. Second attempt went perfectly, and I'm the type that gets excited when a science project goes well. Make sure to not heat the pan too fast or for too long, though it doesn't really matter in the grand scheme of things.

After seasoning, I've made eggs, steak, chicken breast, and roasted veggies. All of them super basic recipes, seared and thrown in the oven to finish. When I say it's the best home cooked meat I think I've make, I really mean it. The maillard reaction is like a billion times easier to achieve in this pan than any I've ever used.

And cleaning? Water, chain mail scrubber, soap if really needed (seasoning will come off but who cares), and heat to dry on the stove. Wipe with a tiny bit of seasoning oil and ready for next time.

Compared to cast iron, I like carbon steel a lot more. I can see the seasoning because it's not a dark black pan, and the texture of cast iron was never something I enjoyed cooking on. Not too mention, this thing heats up on my electric stove just as fast as any other pan. As with my cast iron it takes 30 minutes to preheat the dang thing.

My new favorite one-pan solution

Just received my skillet. It is my first carbon steel and love the design. So far, not issues with food sticking. I am confident this positive vibe will only get better.

As Advertised

Easy to season and clean. Nice sloping sides accomodate more food than you might imagine from its relatively small diameter base. Yet I can still lift it with one hand (most days ; ). Nice addition to our larger Mineral B pan. We are trying to acquire one piece of high quality cookware every couple years as our non-stick begs for replacement.

These fry pans have become completely non-stick after seasoning and only a few uses. I can honestly say the pans are a bit heavy compared to the usual non-stick verity of generic pans, but I'll gladly take that over the toxic chemicals of traditional non-stick. Highly recommend and will be buying more soon.

Fantastic Fry Pans

De Buyer makes quality products that you only have to buy once. The size I purchased comes with a convenient second handle, which can be helpful for lifting as this pan has a respectable amount of heft. Treated well, and I believe you should be looking at years of very satisfactory cooking.

Very happy with it. Followed instructions for seasoning the pan. Works great. Chose it because of experience with line cooks in the restaurant where I baked.

Great all-around pan. My second Mineral B and like the first I'm impressed with the quality. I'm also impressed with the company itself, a pleasure to deal with.

Love my Min B's!

As much as i would love to give the pan a 5 star rating i have one great concern. The handle gets really hot. I have several other carbon steel pans, cast iron pans and stainless steel pans. None of which do the handles get really hot. I have tough hands when it comes to hot things, i have been cooking over 40 years. Other than that i love the pan.
