10 Leaves Basil leaves torn into small pieces
3 lrg tomato, seeded and diced
2 tbsp Extra virgin olive oil
1 clove Garlic, minced
0.5 tsp Salt and freshly ground black pepper to taste
500 g Striploin steak
4 slices Bread thick slices country bread


  1. Combine basil, tomatoes, oil, garlic and ¼ tsp salt in a large bowl. Season with pepper. Stir then cover and let stand at room temperature at least 1 hour, or up to 4 hours.
  2. Preheat grill to high. Sprinkle steak with remaining salt. Barbecue steak 4 min per side for medium-rare.
  3. Transfer to a platter and let rest 10 min. Barbecue bread, 1 - 2 min per side or until lightly charred.
  4. Slice steak thinly. Top toasted bread with tomato mixture, then sliced steak. Drizzle with any juices from tomato bowl.
