15 ml Canola Oil
4 Chicken breasts, skinless, boneless
1 ml Table Salt
1 ml Pepper
15 ml Butter
1 Onion
375 g Mushrooms
2 ml Thyme
45 ml All Purpose Flour
250 ml Chicken Broth
30 ml Parsley
250 ml UNCLE BEN’S® NATURAL SELECT® Roast Chicken Rice
125 ml Whipping Cream


1. Heat the oil in a large, nonstick skillet set over medium heat. Season the chicken all over with the salt and pepper. Place the chicken in the skillet and cook for 5 minutes per side or until golden. Transfer to a plate.
2. Melt the butter in the same skillet set over medium heat. Add the onion, mushrooms and thyme. Cook for 10 minute or until browned. Sprinkle the flour over the mushrooms; cook for 1 minute. Add the broth and cream; bring to a boil. Return the chicken to the skillet. Cook for 10 minutes or until chicken is cooked through. Stir in the parsley.
3. Meanwhile, prepare the UNCLE BEN’S® NATURAL SELECT® Roast Chicken Rice without the butter. Serve chicken and sauce over rice.
