1 lb Extra lean ground beef [or ground turkey]
1 med Onion chopped
1 pkg Knorr® Sidekicks® Mexican Rice Side Dish
1 can No-salt added diced tomatoes undrained
1.5 cups Water
1 can No-salt added red kidney beans rinsed and drained
6 tbsp Reduced Fat sour cream
0.25 cup Reduced fat cheddar cheese shredded
1 Green Onions thinly sliced


  1. Brown ground beef with onion in 4-quart (4 L) stockpot; drain, if desired.
  2. Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 7 minutes or until rice is tender.
  3. Garnish with sour cream, cheese and green onion.
