2 cups Water
1.3 cups Couscous
0.5 cup Great Value Dried Cranberries
80 ml Our Finest Cold Pressed Extra Virgin Olive Oil
3 tbsp Balsamic vinegar
0.5 tsp Salt
0.5 tsp Pepper
5 cups Kale chopped
0.5 Red Onion sliced
1 Yellow pepper diced
0.5 cup Slivered almonds
4 tbsp Crumbled Feta Cheese


  1. Boil water in a kettle or medium pot.
  2. Heat a large, wide frying pan over medium-high. Add couscous. Stir frequently, and lightly shake pan until couscous is evenly toasted, about 5 min. Remove from heat. Slowly pour in boiling water while stirring. Cover and let sit, 5 min. Fluff couscous with a fork and stir in cranberries.
  3. Whisk oil with vinegar and salt in a large bowl. Season with pepper. Stir in couscous mixture, kale, onion, yellow pepper, almonds and feta.
