4 lrg Tomato
1 jar Roasted Red Peppers 370 mL jar
1 sml English Cucumbers
1 lrg jalapeño pepper, seeded and finely chopped
4 cloves Garlic, minced
2 tbsp Olive Oil
1 tsp Cumin
0.5 tsp Salt
2 cups Grilled ratatouille
340 ml Vegetable cocktail juice
0.25 cup Vodka optional


  1. Pulse tomatoes, red peppers, cucumber, jalapeno, garlic, oil, cumin and salt in a food processor until finely chopped.
  2. Add Grilled Ratatouille and vegetable juice and pulse two more times until combined. Stir in vodka, if using. Chill at least 2 hours before serving.
