2 tbsp Oil for baking pan
3 lrg Egg
1 cup Sugar granulated
0.5 cup Canola Oil
2 tsp Vanilla Extract
1 cup All Purpose Flour Gluten-Free
1 cup Cocoa Powder
1 tbsp Instant Coffee Granules
0.5 tsp Salt
1 cup Chocolate Chips


  1. Preheat oven to 350F. Lightly spray an 8-in. square baking pan with oil. Line bottom with parchment paper.
  2. Whisk eggs with sugar, oil and vanilla in a large bowl. Whisk flour with cocoa, coffee granules and salt in a medium bowl, then whisk into egg mixture. Stir in chocolate chips. Scrape batter into prepared pan.
  3. Bake in centre of oven until a cake tester inserted into centre of brownie comes out clean, about 30 min. Transfer pan to a rack to cool slightly, about 10 min. Cut into 16 squares.
