Gluten-Free Sweet Potato & Cranberry Stuffing

|1 cup||Cranberries Fresh|
|500 g||Honey Garlic Turkey Sausages gluten-free|
|1 med||Onion chopped|
|2 tsp||Thyme fresh, chopped|
|2 tbsp||Balsamic vinegar|
|1 tbsp||Dijon Mustard|
|2 tsp||Brown Sugar|
|1 cup||Vegetable Broth gluten-free|
|3 med||Sweet potatoes peeled and cubed (6 cups/2 lbs)|
|0.5 cup||Walnuts chopped and toasted|
- Heat oven to 375F. Spray at 9-x13-in. baking dish with cooking spray.
- Heat a large frypan over medium-high. Add sausage meat and cook, breaking up meat, until browned, about 7 min. Remove to a plate and set aside. Add cranberries, onion and thyme to frypan and cook until onions soften, about 2 min. Stir in vinegar, Dijon mustard and brown sugar, cooking until almost absorbed. Add broth, sweet potatoes and reserved sausage, tossing to combine.
- Spoon into prepared pan. Cover with foil and bake until sweet potatoes are tender, about 50 min, stirring and leaving uncovered after 25 min. Sprinkle with walnuts.
