2 tsp Becel® Oil
1 med Onion chopped
2 Clove Garlic finely chopped
6 cups Chicken stock reduced sodium
1 lb Boneless skinless chicken breasts cut into 1.25 cm pieces
1 med Tomato seeded and finely chopped
0.5 cup Avocado chopped and ripe
0.25 cup Cilantro coarsely chopped
2 tbsp Lime Juice
0.5 ml Hot Sauce or to taste


  1. Heat Becel® Oil in large saucepan over medium-low heat and cook onion and garlic, stirring occasionally, until onion is tender, about 3 minutes. Add stock and bring to a boil over high heat. Reduce heat to low, then stir in chicken. Simmer, partially covered, stirring occasionally, until chicken is thoroughly cooked, about 10 minutes.
  2. Stir in remaining ingredients just before serving
