0.5 tsp Salt
4 Salmon Fillet
Black Pepper to taste
0.33 cup Olive Oil
0.25 cup Lemon Juice
3 cloves Garlic minced
2 tsp Dijon Mustard
1 tbsp Tarragon finely chopped
1 tbsp Capers finely chopped
Romaine Lettuce 2 heads


  1. Sprinkle 1/2 tsp salt over 4 salmon fillets on a foil-lined baking sheet.
  2. Season with black pepper.
  3. Roast at 450F for 10-12 min.
  4. Gently flake into bite-size pieces.
  5. Whisk 1/3 cup olive oil with 1/4 cup lemon juice, 3 minced garlic cloves and 2 tsp Dijon mustard in a large bowl.
  6. Stir in 1 tbsp each finely chopped tarragon and capers.
  7. Toss with 2 heads romaine lettuce, separated into leaves, and salmon.
