4 Chicken breasts, skinless, boneless
4 Swiss Cheese
30 ml Dijon Mustard
125 ml Bread crumbs
30 ml Fresh Parsley
15 ml Butter
250 ml UNCLE BEN’S® Jasmine Rice
4 Black Forest Ham
30 ml Pesto


1. Preheat the oven to 375F (190C). Slice each chicken breast through the centre so it opens like a book. Place a piece of ham and cheese in the centre. Fold the chicken to enclose the filling. Season with salt and pepper.
2. Place chicken on a foil-lined baking sheet. Brush the top of each chicken breast with the mustard. Toss the breadcrumbs with the parsley and butter until evenly coated. Sprinkle the breadcrumbs over each chicken breast. Bake for 25 minutes or until cooked through.
3. Meanwhile, prepare the UNCLE BEN’S® Jasmine Rice without the butter. Gently stir the pesto into the cooked rice. Serve chicken breasts with rice.
