Balsalmic Vinegar

The characteristic of a good imitation is to be able to mistake it for the real thing. This is a bad imitation and there is surely no mistaking this for real traditional balsamic vinegar. The simple reason is that the sugar content in this is too low.

With 6% acetic acid content it should also have at least 55-60% fruit sugar content.

Make your own imitation traditional balsamic vinegar instead of this, I suggest:
18 to 20~ % acetic acid wine vinegar and (purple or red) concentrated grape juice as the only ingredients. Further try and mix it so that your fruit sugars fall between 45% and 60% by weight of the final product, are about 10x your acetic acid content and your acetic acid content falls between 4.5% and 6%. I don't know how to increase the acetic acid content which is why you have to start with a strong vinegar. Store bought concentrated juice can just be boiled or microwaved to reduce the water and increase the sugar contents, at least up to a certain percentage like 70% to 80% or so. In such a case you'd have to calculate your sugar content by volume vs what you started with according to your concentrated juice information.

Bottom line: real traditional balsamic vinegar is sweet and syrupy with a sort of sweet & sour.
