Haiku Rice Vermicelli is perfect for creating WOW weeknight recipes in just a few minutes. As delicious in hot as in cold dishes, they make it possible to create extraordinary meals during the week without too much effort. The advantage of this vermicelli, compared to others available on the market, is that they are divided into individual servings, so no mess or waste!  Haiku single-portion vermicelli offers a great alternative to rice or potatoes in any meal. Perfect as a side with meat and fish, or incorporate in Asian dishes such as soups, salads and stir-fries. Bought these despite the one bad review just to see if they were indeed as horrible as was described. The thing about rice noodles (and Asian noodles in general) is that you actually shouldn't follow the package directions. They are almost always wrong.

For noodles like these, you want to soak them in room temp water until they're pliable and very droopy, as if they were fresh. THEN you cook them. In a stir fry, you need to add a splash of water and stir fry as normal until all the water is gone (don't worry, it won't dilute your sauce). Test a noodle, and if it's still not as chewy, add a splash more. You don't want to add too much water to make it mushy; experiment a little. For noodle soups, you only need to boil noodles of this size for about 10 seconds after soaking, usually.

All that being said, these noodles suck. Point blank. After soaking, I cooked them in boiled water for like 10 seconds. They fell apart. I've never experienced that before, and I've cooked loads of vermicelli. They were better at like 2-5 seconds, but highly temperamental. I can't imagine them in a stir fry; maybe the sauce would be enough.

If you want finicky noodles and are willing to baby them, go with this brand. Although they also leave a lot to be desired texture-wise, in my opinion (the flavour of rice noodles is usually pretty neutral because of what they're used for). But if you'd like your dish to turn out well without much effort, go with a different brand. Cold shocking the noodles is fine, but you shouldn't HAVE to do that to maintain their texture. It should be something you do based on what dish you're making.

Do yourself a favour: find a good Thai noodle soup recipe (guay tiew) or a soy sauce stir fry recipe (pad see ew), get a better brand of these thin vermicelli, and cook them as I described. The dish will turn out fantastic (as long as the recipe is good. But I guarantee the noodles' texture will be spot on).

don't get these! they taste like cardboard, and don't cook nicely at all! even following directions to a t!
