Regular sugar is so bad for our health.  I react to processed sugar, but can eat any dish made with sucanat.  I was having a hard time finding it, so glad Walmart could get it for me.  Will be returning for more.

Having enjoyed panela added to many hot beverages and in aguapanela when visiting friends in Colombia, I have found sources for it locally are unpredictable. Online the molded and condensed bricks of panela, which is unrefined cane sugar, is readily available in the shapes of cones or flying saucers, but there are now crystallized options.  I realize this product is not marketed as panela, but as unrefined cane sugar. Online research indicated the difference was in the specific manner the cane sugar was extracted, dried and processed, but neither panela nor sucanat underwent refining. These  do  not appear to be a typical sugar crystal of any dimension but rather somewhat regularly shaped particles with rounded edges. The writing on the packaging indicates it has not undergone any refining, yet I find it lacks the deep undertones of caramel tasted and smelled so easily in comparable amounts of other types of unrefined cane sugar. Yes, it sweetens my coffee and tea, but in my opinion it lacks the depth of character that other types of panela, or unrefined cane sugar, have. I could not imagine preparing aguapanela with it, the flavors are much too subtle to combine with either lime or lemon and be satisfying. As an alternative to highly processed table sugar, I applaud the efforts to restore flavor and nature to sweeteners. Compared to other products already on the market, this is more “in between” the convenience of table sugar and the flavor the more traditional panela (sugar) offers. If you like the subtlety of light brown sugar versus dark brown sugar, and have never experienced a fine cup of aguapanela by itself, simply switching from table sugar to this when sweetening your favorite beverage would add a nice dimension and decrease the glycemic index (same load, though). Those who are well accustomed to the flavor and smell of aguapanela or panela added to beverages will likely want to opt for a panela.
