You can pretty much use Chinese broccoli anywhere you'd use regular broccoli, and you can't really go wrong. Although I mainly stick to using it in stir fries or other noodle dishes, and sautéing it with a bit of garlic, or even steaming it and drizzling over an oyster sauce mixture. It's a very essential ingredient for a few Thai dishes, as well, which is what I usually use it for these days.

The stems are quite sweet when cooked, and have a pleasant, mild broccoli flavour while being really hydrating and juicy. And the leaves are slightly more concentrated in flavour, with a small amount of bitterness (very small). But I'm usually stir frying them with sauce, so you don't really notice that much (I personally have no problem with bitter things, though). One key note; you want to add the leaves separate from the stems at the very end of whatever you're stir frying or simmering. Just toss them in when the heat is off, and let the residual heat of your food cook the leaves; they're very delicate, and can acquire a sort of slimy mouthfeel if you cook them too long (kind of like sautéed spinach).
